Work in the vine

  • Fertilization : only organic products, no synthetic products
  • Ploughing of the soils, no weedkillers using
  • We let the grass grow in the vine’s row to have competition between Bunches of grapes and grass. It gives more concentrated wine.
  • Pruning : Guyot pulsard
  • Integrated and substainable culture for high quality bunches of grapes

Wine making process

  • Harvesting of the grapes in the earliest hours of the day
  • Pressing with pneumatic winepress to preserve quality
  • Must flows by gravity in stainless steel tank wit low (8°C) temperature to be settled
  • Then, alcoholic fermentation with controlled temperature starting at 12°C and finishing at 20°C in stainless steel vat (SSV)
  • Sancerre Rosé is ageing on its lees during 4 to 6 monthes in SSV to preserve oxidation
  • Filtered with keiselghur and bottling in our cellar 2 monthes before selling

Tasting Note

  • Color : Pale yellow-gold with a hint of green
  • Nose : Intense and complex. Mineral and light flint notes which are very pleasant and mixed with very ripe fruit aromas (plum, peach, banana).The finish reveals subtle vegetal notes for a fresh and delicate wine.
  • Palate : At first, this wine is supple and round with ripe aromas. Then it shows plenty of expression to end with a well balanced finish. This wine is full-bodied, with a persistent aromatic richness : it confirms that it’s fully developed, as it could be smelt before tasting.

Wine and Food

It’s easy to match this Sancerre Blanc with white meat and goat cheese like « Crottin de Chavignol ». This wine will go perfectly with fresh fish, shellfish and crustaceans served with a touch of lemon.

You should try it with Sushis, for an exotic note.
