Work in the vine

Wine making process

  • Harvesting of the grapes in the earliest hours of the day
  • Pressing with pneumatic winepress to preserve quality
  • Must flows by gravity in stainless steel tank wit low (8°C) temperature to be settled
  • Then, alcoholic fermentation with controlled temperature starting at 12°C and finishing at 20°C in stainless steel vat (SSV)
  • Sancerre Blanc "Confession" is ageing on its lees during 12 monthes to give more powerful sensation
  • No filtered and bottling in our cellar 2 monthes before selling of this top vintage wine

Tasting Note

  • Color : Pale yellow with silver highlights
  • Nose : A great, thrilling intensity. It evolves on a varietal and floral wine profile, with kiwi, boxwood and lychee notes. Quite delicate, with subtle white flowers aromas.
  • Palate : The entry is fleshy and immediately reveals voluptuous pear, peach and mango flavours. With lychee, the finish is pleasant and lingering, without the minerality of this « magical » terroir necessarily being forgotten. The name “confession” really suits the cuvée.

Wine and Food

It will be perfect to drink with some fish cooked in sauce like « rouget » with a spicy and saffron sauce. You shouldn’t forget to try it with matured cheese and all the sweet and savoury dishes.
